Recipe

If you want to try out an yummy homey dinner for the family, try this. It is sooooo easy, you could make rolls, green beans, and dessert to compliment it or just serve it as an entire meal!

Dinner in a Pumpkin

1 lb ground beef
1 small onion, diced
1 can cream Chicken soup
3 cups cooked rice
2 Tbs. soy sauce
2 Tbs. brown sugar

Preheat oven to 350 degrees. Prepare pumpkin: clean outside, cut a lid out of the top (how you would a jack-o-lantern), clean out seeds from inside pumpkin, place pumpkin on large baking sheet, set aside.

Brown beef and onion. Drain fat. Combine remaining ingredients with meat. Since everything is already cooked at this point, you may want to add a little salt and pepper to taste. Place inside pumpkin and replace lid on pumpkin on top.

Spray exterior of pumpkin with cooking spray to give it a glossy look when it comes out of oven. Bake pumpkin for 1 ½ hours. Serve with additional brown sugar, if desired.

What a good recipe. Now I am all inspired to get a pumpkin the right size and try it. I hope all is well. I have had several days being out of it in the last week and a half but have been thinking about you and Billy and your THREE darling children. Hope all is well. Love, G,G,& G.
